Zesty Greek Beef Bowl

with Lemony Rice, Zucchini and Tzatziki

1. Cook Rice Rinse and drain rice in a fine mesh sieve. To a medium pot, add 1 tbsp. butter, rice and spice blend with 1¼ cups salted water and bring to a boil. Reduce heat to low and cover with a lid. Cook for 12–15 minutes, or until grains are tender.
2. Prepare Ingredients Zest and cut lemon in half. Pick and chop dill. Dice zucchini into 1/2 inch pieces. Grate cucumber using a box grater.
3. Cook Vegetables Heat 1 tbsp. olive oil in a large non-stick skillet over medium-high. Once hot, add tomatoes and zucchini and cook for 4–5 minutes until golden and tomatoes burst. Season to taste with salt and pepper. Remove vegetables from skillet and add to a medium bowl with olives and crumbled feta.
4. Prepare Tzatziki Meanwhile, in a small bowl, combine Greek yogurt, grated cucumber, dill and half of the garlic. Add 1 tbsp. water at a time until desired consistency is reached. Season to taste with salt and pepper.
5. Cook Beef Drain beef and pat dry with paper towel. Heat 1 tbsp. olive oil in the same skillet over medium-high. Once hot, add beef and cook 4–5 minutes, using a wooden spoon to break up pieces, until golden and crispy, or an internal temperature of 165°F. Remove from heat. Add oregano, remaining garlic and the following to taste: balsamic vinegar, salt and pepper. Cook for 1 minute until fragrant.
6. Finish and Serve Once rice is cooked, stir in half of the lemon juice and zest to taste. Divide rice between serving bowls. Top with beef, vegetables and tzatziki. Cut remaining lemon into wedges and serve on the side. Enjoy!
