1. Setup
Preheat the oven to 400°F. Slice the bread. Chop the rosemary. Cut the dates into pieces. On a separate board, chop the bacon. Take out the goat cheese and cream cheese to get them to room temperature.
2. Cook the bacon and the dates
In a bowl, combine the bacon, the dates, the rosemary, the brown sugar and half of the honey. Spread in one layer on a baking sheet and cook in the oven for 12-15 minutes or until the bacon is cooked and well caramelized.
3. Make the croutons
Spread the slices of bread on a baking sheet. Drizzle with olive oil and cook in the oven for 8-10 minutes or until golden and crispy.
4. Make the whipped goat cheese
In a blender or using a immersion blender, blend the goat cheese with the cream cheese and 2 2P | 3 3P tbsp of olive oil. Season with salt and pepper and mix well until smooth.
5. Plate your dish
Serve the whipped goat cheese and garnish with the bacon, the dates and the rest of the honey. Serve with croutons. Bon appétit!
