Western Omelette Grilled Cheese

1. Setup Thinly slice the mushrooms and cucumber. Chop the shallot. Cut the pepper into small cubes. Cut the tomatoes into quarters.
2. Cook the vegetables Heat a drizzle of oil in a pan over medium-high heat. Cook the mushrooms, pepper and shallot for 4-5 minutes. Add salt and pepper.
3. Add the eggs Add the egg and paprika and mix. Cook for 2-3 minutes. Add salt and pepper to taste.
4. Make the sandwich Garnish the slices of bread with the slices of cheddar and the eggs. Close the sandwich. Add a drizzle of oil to the pan over medium heat. Cook the sandwich 2-3 minutes on each side, until the bread is crispy and the cheese is melting.
5. Make the salad Mix the tomatoes with the cucumber, a drizzle of oil, salt and pepper.
6. Plate your dish Serve the grilled cheese with the salad. Bon appétit!
