1. Setup
Thinly slice the mushrooms and cucumber. Chop the shallot. Cut the pepper into small cubes. Cut the tomatoes into quarters.
2. Cook the vegetables
Heat a drizzle of oil in a pan over medium-high heat. Cook the mushrooms, pepper and shallot for 4-5 minutes. Add salt and pepper.
3. Add the eggs
Add the egg and paprika and mix. Cook for 2-3 minutes. Add salt and pepper to taste.
4. Make the sandwich
Garnish the slices of bread with the slices of cheddar and the eggs. Close the sandwich. Add a drizzle of oil to the pan over medium heat. Cook the sandwich 2-3 minutes on each side, until the bread is crispy and the cheese is melting.
5. Make the salad
Mix the tomatoes with the cucumber, a drizzle of oil, salt and pepper.
6. Plate your dish
Serve the grilled cheese with the salad. Bon appétit!
