Vegetarian Italian Sausage Sheet Pan
with gnocchi, cherry tomatoes, spinach and a creamy lemony herb sauce

1. Setup
Preheat the oven to 425°F. Slice the sausages diagonally. Cut the lemon into wedges.
2. Bake in the oven
Put the gnocchi in a bowl with the cherry tomatoes, 3/4 of the spices, a generous drizzle of oil, salt and pepper. Mix well and put on a baking sheet lined with baking paper. Add the slices of sausage to the sheet pan. Bake in the oven for 18-20 minutes.
3. Add the spinach
When step 2 is completed, remove the pan from the oven, add the spinach and mix.
4. Prepare the sauce
In a food processor, add the tahini, juice of half a lemon, herbs, remaining spices to taste, a drizzle of oil and 1/4 |1/3 cup of water. Reduce everything into a homogeneous sauce. Adjust seasoning to taste. Add more water if desired to adjust the texture of the sauce to your liking.
5. Plate your dish
Serve the gnocchi and garnish with the sauce.
