Vegetarian Burrito Bowl with TVP

with cauliflower rice, beans, corn and sour cream

1. Setup Cut the tomato into small cubes. Thinly chop the garlic. Thinly slice the green onion. Put the TVP in a bowl with 3/4 2P | 1 3P cup of water and let absorb. Drain and rinse the beans and corn.
2. Grate the cauliflower Grate the cauliflower into a large bowl.
3. Cook the cauliflower Heat a generous drizzle of oil in a large pan. Cook the cauliflower with the crumbled broth cube 6-8 minutes until golden brown. Remove from the pan and keep warm.
4. Cook the TVP Add a drizzle of oil, the TVP, beans, garlic, corn and spices to the pan. Add salt and pepper. Cook 4-6 minutes.
5. Plate your dish Serve everything in a bowl and garnish with the tomatoes, green onion and sour cream. Add lime juice to taste. Otherwise, leave everything on the table and let everyone make their own bowl. Bon appétit!
