1. Setup
Cut the tomato into small cubes. Thinly chop the garlic. Thinly slice the green onion. Put the TVP in a bowl with 3/4 2P | 1 3P cup of water and let absorb. Drain and rinse the beans and corn.
2. Grate the cauliflower
Grate the cauliflower into a large bowl.
3. Cook the cauliflower
Heat a generous drizzle of oil in a large pan. Cook the cauliflower with the crumbled broth cube 6-8 minutes until golden brown. Remove from the pan and keep warm.
4. Cook the TVP
Add a drizzle of oil, the TVP, beans, garlic, corn and spices to the pan. Add salt and pepper. Cook 4-6 minutes.
5. Plate your dish
Serve everything in a bowl and garnish with the tomatoes, green onion and sour cream. Add lime juice to taste.
