1. Setup
Preheat the oven to 400°F. Thinly slice the mushrooms, onion and kale. Cut the tomatoes into small cubes. Tear the bread into pieces.
2. Cook the vegetables
Heat a drizzle of oil in a pan over medium-high heat. Cook the onion, mushrooms and spices for 4-5 minutes. Add salt and pepper.
3. Bake in the oven
In a large bowl mix the pieces of bread with the kale, tomatoes, mushrooms, onion, milk, egg, salt and pepper. Transfer everything to a baking dish. Garnish with the cheddar cheese. Bake in the oven for 18-20 minutes.
4. Plate your dish
Serve. Bon appétit!
