1. Setup
Preheat the oven to 400°F. Cut the sweet potato and feta into small cubes. Cut the broccoli into pieces. Thinly slice the onion. Drain and rinse the lentils.
2. Bake the vegetables
Cover a baking sheet with baking paper. Add the sweet potatoes, broccoli, onion, cherry tomatoes, feta cheese, a drizzle of oil, salt and pepper. Bake in the oven for 18-20 minutes.
3. Make the sauce
Zest the lemon. Put the basil, garlic and zest in a bowl with 1/3 2P | 1/2 3P cup of oil. Use a blender or a food processor and pulse until it becomes a smooth sauce.
4. Plate your dish
Toss the lentils with the cooked vegetables. Serve and garnish with the basil sauce and lemon juice to taste. Adjust salt and pepper to taste. Bon appétit!
