1. Cook the fries
Preheat the oven to 425°F. Cut the potatoes into fries. Place on a baking sheet lined with baking paper. Add a drizzle of oil, salt and pepper. Mix. Bake in the oven for 24-28 minutes until browned.
2. Setup
Grate the carrot and cabbage. Thinly slice the green onion. Cut the mushrooms into pieces.
3. Make the coleslaw
In a bowl, mix the cabbage with the carrot, green onion, mayonnaise, a drizzle of oil, 1 tbsp. of vinegar, a pinch of sugar, salt and pepper.
4. Heat the buns
In a steamer, cook the Bao buns for 3-4 minutes or until warm and soft. If you don't have a steamer, put them in a strainer over a pot of boiling water and cover. The buns should not touch the water. Put parchment paper in the strainer so that the buns don't stick.
5. Cook the mushrooms
Heat a drizzle of oil in a large pan on medium-high. Reduce the heat to medium, add the mushrooms and cook 6-7 minutes until browned. Add the BBQ sauce, mix and remove from the heat.
6. Plate your dish
Top the Bao buns with the mushrooms and some coleslaw. Serve with the fries. Bon appétit!
