with tomatillo salsa, sour cream, cilantro and tomato

1. Setup Preheat oven to 425°F. Cut the tomato into small cubes. Cut the lime into wedges. Put the TVP in a bowl with enough water to cover. Let it absorb the water.
2. Cook the TVP Heat a drizzle of oil in a skillet over medium high heat. Add the TVP, spices, salt and pepper and cook for 3-4 minutes. Add the cheese and mix for 1 minute.
3. Make the taquitos Line a sheet pan with baking paper. Drain the TVP if needed. Put the PVT in each tortilla and roll them up. Place on the baking sheet and brush lightly with oil. Bake for 12-15 minutes in the oven until browned.
4. Make the sauce Drain the tomatillos. Add 0.5 2P | 0.75 3P tomatillos in a food processor with the garlic, jalapeños to taste (spicy!), half the cilantro, juice of half a lime and 2 2P | 3 3P tbsp. of sugar. Pulse everything into a sauce. Adjust salt and pepper to taste. Place in a small saucepan over low heat 4-6 minutes to heat the sauce a little bit.
5. Plate your dish Serve the taquitos and garnish with the tomatillo sauce, sour cream, tomatoes and remaining cilantro. Add lime juice to taste. Bon appétit!
