Tomato and Bell Pepper Grilled Naan
with mozzarella, parmesan, parsley, basil and lemon

1. Grill the naan bread
Preheat the oven to 400°F.
Place the naan breads on a baking sheet lined with baking paper. Top with the mozzarella and cook in the oven for 6-8 minutes or until the cheese is melted.
2. Setup
Cut the tomato into small pieces. Cut the bell pepper into thin strips. Chop the herbs and the garlic.
3. Cook the garlic
Warm up a drizzle of oil in a small pan over medium-high heat. Cook the garlic for 1 minute or until browned. Remove from the pan.
4. Make the salads
In a bowl, mix the tomato with the bell pepper, the roasted garlic, the herbs, a drizzle of oil, salt and pepper. In another bowl, mix the arugula with the parmesan, the lemon juice (to taste) and pepper.
5. Plate your dish
Top the naan breads with the tomato salad and the arugula. Bon appétit!
