1. Setup
Thinly slice the pepper and cucumber into strips. Grate the carrot. Mince the basil. Crush the peanuts.
Cut the tofu into rectangles or cubes and thread onto the skewers.
2. Cook the noodles
Bring a pot of water to a boil. Cook the noodles 1 minute. Drain and rinse under cold water to cool.
3. Cook the tofu
Lightly brush the tofu with some of the Satay sauce. Heat a drizzle of oil in a pan over medium-high heat. Cook the skewers 3-4 minutes on each side until browned.
4. Mix the noodles
Toss the noodles with the bell pepper, carrot, cucumber, basil and peanuts. Mix the soy sauce with the maple syrup and 1/4 2P | 1/3 3P cup of oil. Add the sauce to the noodles and mix. Add salt and pepper to taste.
5. Plate your dish
Serve the skewers with the Satay sauce and the noodles. Bon appétit!
