Tofu Rice Paper Rolls

with cucumber, bell pepper, mint and peanut sauce

1. Setup Cut the cucumber and the pepper into thin sticks. Cut the tofu into long rectangular pieces, about 9 per person. Chop the garlic and the chili pepper. Separate a few mint and cilantro leaves.
2. Cook the tofu In a skillet over medium-high heat, add a drizzle of oil. Add the tofu pieces, the soy sauce and half of the honey. Coat the tofu pieces well in the sauce. Cook the tofu 2-3 minute on each side or until the sauce has reduced and that the pieces of tofu are well colored.
3. Cook the vermicelli Bring 2 2P | 3 3P cups of water to a boil. Place the vermicelli in a large bowl. Pour boiling water over the vermicelli. Let sit 3-4 minutes until the noodles are tender. Drain and set aside.
4. Form the rolls Prepare a large bowl with lukewarm water. Prepare your countertop to make the rolls, either a plastic board or a damp cloth. Soak the rice paper in the water 5-6 seconds. It is normal if it still seems a little stiff. Garnish the bottom center of the sheet with the vermicelli, the tofu, the vegetables and a few mint and cilantro leaves. Fold the bottom of the sheet over the filling. Fold both sides of the sheet towards the center. Slowly roll the roll to close it well.
5. Make the sauce In a saucepan over medium-low heat, combine the peanut butter, the garlic, the chili pepper, to taste (caution! spicy) the rest of the honey and 120 2P | 180 3P ml of water. Cook until it becomes a smooth sauce, 2-3 minutes.
6. Plate your dish Serve the tofu rolls with the sauce. Bon appétit!
