1. Prepare Ingredients
Bring 2½ litres salted water to a boil in a large pot. Drain tofu (or customized protein) and thoroughly pat dry with paper towel. Dice tofu into 1/2 inch cubes and season well with salt. Trim ends, separate leaves and wash bok choy. Cut bok choy in half lengthwise and slice into 1/4 inch slices. Slice green onion into 1 inch pieces. Trim stems from mushrooms and cut into 1/4 inch slices. Pick and chop cilantro leaves.
2. Cook Noodles
Once water is boiling, add rice noodles and cook for 2–3 minutes, until al dente. Drain in a sieve and rinse thoroughly under cold water to prevent sticking.
3. Begin Stir Fry
In a large skillet, heat 1 tbsp. oil over medium-high. Once hot, add tofu and cook 4–5 minutes, tossing often until golden. - (If customized protein was selected, cook 2–3 minutes to an internal temperature of 165°F).
4. Prepare Sauce
Meanwhile, in a medium bowl, whisk together 1/3 cup water, sauce mix, coconut sugar, garlic, peanut butter, sesame oil and two-thirds of the peanuts. Season with the following to taste: salt, sambal oelek and lime juice. If desired, adjust consistency by adding 1 tbsp. water at a time.
5. Finish Stir Fry
To skillet from Step 3, add 1 tbsp. oil and mushrooms and cook for 1–2 minutes, until mushrooms are lightly golden. Add green onion, carrot and onion. Cook for 2–3 minutes, until vegetables are tender. - Reduce heat to medium, add prepared sauce, noodles and bok choy. Use tongs to toss ingredients with sauce and cook for 1–2 minutes, until noodles are warmed through and bok choy is bright green and tender.
6. Serve
Divide pad thai onto serving plates. Garnish with cilantro and remaining peanuts. Enjoy!
