1. Setup
Cut the seitan and bread into cubes. Cut the pepper and mushrooms into pieces. Zest the lemon and cut it into wedges. Finely chop the herbs.
2. Assembler the skewers
Place the seitan, bell pepper, mushrooms, bread, herbs and Dijon mustard in a large bowl. Add a generous drizzle of oil, salt and pepper and mix well to season each piece. Assemble everything on the skewers.
3. Cook the skewers
Heat a skillet or grill over medium-high heat. Cook the skewers 3-5 minutes on each side until browned. Cover for 2-3 minutes if desired to heat the center of the seitan.
4. Cook the couscous
Bring a saucepan with 1 2P | 1.5 3P cups of water to a boil. Pour in the couscous, cover and let the liquid absorb off heat, about 4-5 minutes. Break up the couscous with a fork and season with a drizzle of oil, the lemon zest, the juice of half a lemon, salt and pepper.
5. Plate your dish
Serve the skewers on the couscous with the yogurt. Add lemon juice to taste. Bon appétit!
