1. Setup
Preheat the oven to 400 ° F. Slice the cucumbers. Chop the cilantro, the garlic, the ginger, the chili peppers and the peanuts. Slice half of the shallot and chop the rest.
2. Cook the meatballs

3. Make the peanut sauce

4. Cook the rice noodles
Bring a pot of water to a boil. Cook the rice noodles 3-4 minutes. Drain and reserve.
5. Plate your dish
