Thai Beef and Mango Noodle Salad

with soba noodles, mini-peppers and fish sauce

1. Setup Chop garlic and the chili peppers. Cut the lime in half. Peel and cut the mango into thin slices. Cut the bell peppers into sticks. Separate the mint and basil leaves from the stems. On a separate board, cut the beef strips into smaller strips, if desired.
2. Cook the soba noodles Bring a pot of water to a boil. Add the noodles and cook for 6-7 minutes. Drain, rinse with cold water and set aside.
3. Cook the beef In a pan over, medium-high heat, add a drizzle of olive oil. Add the beef strips. Season with salt and pepper. Cook for 2-3 minutes on each side or until theyre fully cooked.
4. Make the sauce In a bowl, combine the garlic, the chili peppers (caution! spicy), the fish sauce, the lime juice and 1 2P | 2 3P tbsp. of rice vinegar.
5. Assemble In a bowl, combine the soba noodles, the beef strips, the peppers,the mango, the shallots, the mint and basil leaves and the sauce.
6. Plate your dish Serve the soba noodle salad. Bon appétit!
