Tex Mex Spiced Cod fish
with orzo, guacamole, corn and feta salsa and a chip & salsa appetizer

1. Cook the orzo
Preheat the oven to 400°F. Bring a saucepan of water to a boil. Pour in the orzo and cook for 6-8 minutes until tender. Drain. Mix with a drizzle of oil, salt and pepper.
2. Setup
Cut the tomato into chunks. Chop the shallot, cilantro and radish. Drain and rinse the corn. Crumble the feta. Cut the tortillas into triangles. Cut the lime in quarters.
3. Cook the chips
Spread the tortillas on a baking sheet. Cook in the oven for 10-12 minutes or until colored.
4. Prepare the salsas
In a bowl, combine the corn, feta, half the shallot, half the cilantro, the radish, a bit of lime juice, a drizzle of oil, salt and pepper. Set aside. In a food processor, add the tomatoes, the remaining shallot and cilantro, a bit of lime juice, 1.5 tsp. of the spices, a drizzle of oil, salt and pepper. Grind everything into a salsa.
5. Cook the fish
Pat the fish dry. Cover with the remaining spices. Add salt and pepper. Heat a drizzle of oil in a pan over medium heat. Cook the fish 2-4 minutes on each side.
6. Plate your dish
Serve the fish with the orzo, guacamole and corn salsa. As an appetizer, serve the chips with the tomato salsa. Bon appétit!
