Tex Mex Beef Strip Fajita Bowl

with brown rice, corn, tomato, bell pepper, guacamole and sour cream

1. Cook the rice Bring a large pot of water to a boil. Cook the brown rice in the water for 24-28 minutes or until tender. Drain. Season with some salt and some pepper to taste.
2. Setup Slice the bell pepper into thin strips. Cut the tomato into cubes. Drain and rinse the corn.
3. Cook the beef Put the juice of half a lime in a bowl with the spices (to taste), a drizzle of oil, salt and pepper. Mix and add the beef strips. Coat well each strip. Heat a drizzle of oil in a pan over high heat. Cook the beef strips for 2-4 minutes or until the desired doneness.
4. Plate your dish Serve the rice in a bowl and garnish with the vegetables, the beef, the sour cream, the guacamole and the lime juice. Season the vegetables with some salt and some pepper, to taste.
