Tempeh Pad Thai

with broccoli, toy choy, peanuts and cilantro

1. Setup Bring a pot of water to a boil. Cut the broccoli into small pieces. Cut off the end of the Toy choy then cut them into pieces. Roughly chop the peanuts. Chop the cilantro. Cut the tempeh into small cubes. Add to the sauce mixture the juice of half a lime and 1 tbsp. of sugar.
2. Cook the noodles Cook the noodles in the pot of boiling water for 1-2 minutes or until tender. Keep 1/4 2P | 1/3 3P cup of cooking water then drain.
3. Cook the broccoli Warm up a drizzle of oil in a large pan over medium-high. Cook the broccoli with the spices for 3-4 minutes. Add the Toy choy and the tempeh and cook another 3-4 minutes. Add more oil if needed. Add salt and pepper, to taste.
4. Add the noodles Add the noodles, the cooking water and the sauce mixture to the pan. Mix and cook for 1-2 minutes. Adjust the seasoning, to taste.
5. Plate your dish Serve and garnish with the peanuts, the cilantro and some lime juice (to taste). Bon appétit!
