Tangy Glazed Cauliflower Banh Mi

1. Prepare Cauliflower Turn oven on to 450°F with a rack in the centre and one 6 inches from the top. Cut cauliflower into 1 inch florets. Heat 2 tbsp. oil in a large oven-proof skillet over medium-high. Add cauliflower and cook for 4–5 minutes or until starting to brown. Transfer skillet to centre rack and set a timer for 15 minutes.
2. Prepare Ingredients Pick and chop cilantro leaves. Trim ends and slice cucumber in half lengthwise, then into 1/4 inch half moons. Peel garlic and shallot and trim ends. Chop garlic. Slice shallot into 1/4 inch pieces. Slice buns in half lengthwise, keeping one side intact.
3. Prepare Glaze and Spicy Mayo In a small bowl, combine glaze base, ground ginger and half of the sambal oelek to taste. In a second small bowl, combine vegan miso mayo and remaining sambal oelek to taste.
4. Prepare Salad In a large bowl, combine shallot, garlic, sesame oil and dressing base. Add half of the following: cilantro and cucumber. Season to taste with salt and pepper.
5. Glaze Cauliflower and finish buns When timer goes off, carefully add glaze to the skillet and toss to coat. Turn broiler on to 500°F. Place skillet on top rack and broil for 2–4 minutes until cauliflower is golden and glaze is sticky. Place buns in oven on middle rack, insides facing up. Cook for 5–7 minutes or until toasted to your preference. Monitor closely to prevent burning. Carefully remove buns and skillet from oven.
6. Assemble and Serve In large bowl with salad, combine spring mix and peanuts. Divide between serving plates. Spread prepared spicy miso mayo inside buns. Add carrot and daikon, cauliflower and remaining cucumber. Top with remaining cilantro and serve with salad. Enjoy!
