Tandoori Spiced Chicken Drumsticks
with sumac radish and cucumber salad, cilantro yogurt and lime rice

1. Cook the chicken
Preheat the oven to 425°F. Mix the chicken drumsticks with a drizzle of oil, the Tandoori spices, salt and pepper. Place on a baking sheet lined with baking paper. Bake in the oven for 26-28 minutes.
2. Setup
Thinly slice the cucumber and onion. Chop the cilantro. Zest the lime. Cut the radishes in 2 or 4 depending on the size.
3. Cook the rice
Bring a pan with 1.5 2P | 2 3P cups of water to boil. Pour in the rice, cover and cook over low heat for 10-12 minutes. When the rice is cooked add a drizzle of oil, the lime zest, salt and pepper.
4. Make the salad
Toss the cucumber with the onion, radish, sumac, a drizzle of oil, 1 tsp. of red wine or cider vinegar, salt and pepper.
5. Mix the yogurt
Mix the yogurt with the cilantro, a little lime juice to taste and 1-2 tbsp. of water. Add salt and pepper to taste.
6. Plate your dish
Serve the chicken with the rice, yogurt and salad. Bon appétit!
