1. Begin Broccoli
Turn oven on to 425°F and line a baking sheet with foil. Cut any large broccoli florets into 1 inch pieces. On baking sheet, toss broccoli with 2 tbsp. oil, spice blend and salt and pepper to taste. Place in oven and set timer for 17 minutes.
2. Prepare Ingredients and Sauce
Meanwhile, cut pepper in half and remove stem and seeds. Slice into 3/4 inch strips. Thinly slice green onion. Roughly chop water chestnuts. Chop garlic. In a small bowl, combine garlic, ginger, sauce blend, sugar, cornstarch and 2 tbsp. cold water until dissolved.
3. Begin Cooking
Drain chicken and pat dry with paper towel. Cut chicken into 1 inch pieces. Heat 1 tbsp. oil in a large skillet over medium-high. Once hot, add chicken and season to preference with red pepper flakes. Cook chicken for 2–3 minutes, or until chicken is no longer pink on the outside. Add pepper and cook for 2–3 minutes, stirring occasionally, until tender. Add edamame, water chestnuts and carrot and cook for 1–2 minutes, or until warmed through.
4. Cook Sauce
Add prepared sauce to skillet and stir to coat chicken and vegetables. Cook for 1–2 minutes, or until sauce is bubbling and thickened and chicken is cooked to an internal temperature of 165°F. Season to taste with salt and pepper.
5. Roasted Cashews
Once timer in Step 1 goes off, push broccoli to one side. Add cashew pieces to baking sheet and cook for 4–5 minutes, until cashews are golden brown.
6. Serve
Divide chicken and vegetables onto plates. Place broccoli on the side. Garnish with green onion, seed blend and roasted cashews. Enjoy!
