Sun-dried tomato and spinach eggs

with feta and toast

1. Setup Chop the spinach and the sun-dried tomatoes. Mix the spinach and tomatoes with the onion powder, salt and pepper.
2. Cook the eggs Heat a drizzle of oil in a pan over medium-high heat. Add the eggs and cook for 1 minute. Add the spinach mixture and cook 3-4 minutes until the eggs are cooked as desired. Add salt and pepper to taste.
3. Plate your dish Toast the bread. Serve the bread with the eggs and garnish with crumbled feta. Bon appétit!
