Sticky Teriyaki Chicken

with Broken Rice & Roasted Carrots

1. Prepare Vegetables Turn oven on to 425ºF and line a baking sheet with foil. Thinly slice green onion. Trim ends, separate leaves and wash bok choy. Cut in half lengthwise. In a medium bowl, combine mayonnaise, miso, maple syrup and salt and pepper to taste. To the same bowl, add carrots, toss to coat and transfer to baking sheet. Place baking sheet in oven and set timer for 10 minutes.
2. Prepare Rice Rinse and drain broken rice in a fine mesh sieve. Add rice to a small pot with 1¼ cups salted water and bring to a boil. Reduce heat to low and cover with a lid. Cook for 10–12 minutes or until grains are tender. Once rice is cooked, stir in toasted sesame seeds.
3. Prepare Chicken Meanwhile, drain chicken and pat dry with paper towel. Coat chicken with chicken seasoning. Heat 1 tbsp. oil in a large skillet over medium-high. Once hot, add chicken and cook for 3–4 minutes per side, or until chicken reaches an internal temperature of 165°F.
4. Prepare Bok Choy Drizzle 1 tbsp. oil over bok choy and season to taste with salt and pepper. Once timer goes off, remove baking sheet from oven. Flip carrots. Add bok choy to baking sheet with carrots. Return baking sheet to oven and cook 8–10 more minutes or until vegetables are tender and turning golden.
5. Finish Chicken Reduce heat to medium-low and add teriyaki sauce base, rice vinegar, ginger, brown sugar, sesame oil and sambal oelek to taste. Cook 2–3 minutes stirring frequently or until sauce is slightly thickened and chicken is coated. Cover chicken with a lid or foil to keep warm until vegetables are finished cooking.
6. Serve Divide rice between serving bowls and top with chicken, bok choy and carrots. Drizzle remaining sauce from the pan overtop. Garnish with green onion. Enjoy!
