Steak Ranchero Skillet & Arroz Roja

with Lime Crema & Tortilla Strips

1. Cook Rice Turn oven on to 425°F and line a baking sheet with foil. Rinse and drain rice in a fine mesh sieve. To a small pot, add rice, rice spice, 1¼ cups salted water and half of the tomato paste and bring to a boil. Reduce heat to low and cover with a lid. Cook for 15–18 minutes, or until grains are tender.
2. Prepare Ingredients Cut bell pepper in half and remove stem and seeds. Slice bell pepper into 1/2 inch strips. Dice tomato into 1 inch pieces. Pick and chop cilantro. Cut avocado in half and remove pit. Slice into 1/2 inch slices and scoop flesh out with a large spoon. Peel onion and trim ends. Dice onion in 3/4 inch pieces.
3. Prepare Tortilla Crisps Stack tortillas, cut in half and then into 1/4 inch thick strips. Toss with 1/2 tbsp. oil on baking sheet and spread out into a single layer. Season to taste with salt and pepper and bake for 8–10 minutes until crisp and golden. Monitor closely to prevent burning.
4. Cook Steak Drain steak and pat dry with paper towel. Season well with salt and pepper. Heat 1 tbsp. oil in a large skillet over medium. Once hot, add steak and cook for 4–5 minutes per side until steak reaches an internal temperature of 135°F. Remove steak from skillet and let rest for 5 minutes to an internal temperature of 145°F.
5. Cook Vegetables To skillet, add onion and pepper and cook for 4–5 minutes until softened. Add tomato, spice blend, sugar, demi glace seasoning, remaining tomato paste, chipotle pepper in adobo to taste and cook for 30 seconds to 1 minutes, until fragrant. Add 1/4 cup water and cook for 2–3 minutes, until thickened. Season to taste with salt and pepper.
6. Assemble and Serve Slice steak against the grain into 1/4 inch thick slices. Divide rice, steak, vegetables and avocado between serving plates. Garnish everything with cilantro and top with tortilla chips. Serve lime crema on the side. Enjoy!
