1. Setup
Preheat the oven to 325°F. Chop the onion. Chop the garlic. Cut the bagel into bite-sized pieces.
2. Cook the onion
Warm up a drizzle of oil in a pan over medium-high heat. Cook the onion for 3-4 minutes or until lightly browned. Add the garlic and cook for 1-2 minutes. Add salt and pepper. Remove from the pan.
3. Prepare the dish
In a bowl, whisk 4 2P | 6 3P eggs with the cream, the Dijon mustard, salt and pepper. Grease a baking dish with butter or oil. Add the bagel pieces, the spinach, the onion and the egg mixture. Garnish with the cheddar. Bake in the oven for 40-50 minutes.
4. Plate your dish
Let the strata stand for 5-8 minutes before serving. Bon appétit!
