1. Cook Rice
Turn oven on to 425°F. Rinse and drain rice in a fine mesh sieve. Add rice to a medium pot with 1¼ cups salted water and bring to a boil. Reduce to low and cover with a lid. Cook for 23–25 minutes, or until grains are tender.
2. Prepare Ingredients and Roast Broccoli
Meanwhile, line baking sheet with foil. Cut any large broccoli florets into 1 inch pieces. Toss broccoli on baking sheet with 1½ tbsp. oil and season to taste with salt and pepper. Transfer to oven and cook for 17–19 minutes until golden. Thinly slice green onion. Chop the garlic. In a medium bowl, mix carrot with rice vinegar and season well with salt. Set aside.
3. Cook Edamame
Heat 1/2 tbsp. oil in a large non-stick skillet over medium-high. Once hot, add edamame and cook for 1–2 minutes until warmed through. Season to taste with salt and pepper. Transfer edamame to a plate, cover with foil and set aside.
4. Cook Tofu
Drain tofuand pat dry with a paper towel. Cut into 1/2 inch cubes. In a second medium bowl, add tofu, cornstarch and 1/4 tsp. salt. Toss to coat evenly. Heat 2 tbsp. oil in a large skillet over medium-high. Shake any excess cornstarch off of tofu. Add tofu to skillet and cook for 5–7 minutes, turning as needed, until tofu is crispy and golden. Wipe excess cornstarch from bowl with a paper towel.
5. Prepare Peanut Sauce
In the same bowl from Step 4, whisk together soy blend, peanut butter, ginger, coconut sugar, garlic, 3 tbsp. hot water and red curry paste to taste. Add 1 tbsp. water at a time until desired consistency is reached and set aside.
6. Assemble and Serve
Divide rice between serving bowls. Top with edamame, carrots, broccoli and tofu in sections. Drizzle peanut sauce over everything. Garnish with green onion and peanuts. Enjoy!
