1. Prepare Ingredients
Turn oven on to 425°F. Pick and chop cilantro leaves. Zest and cut lime in half. Cut peppers in half, remove stem and seeds and dice into 1/4 inch pieces. Roughly chop pickled jalapeno. Cut the onion in 1/4 inch pieces.
2. Prepare Mango Salsa
In a small bowl combine 1 tbsp. olive oil, mango, onion, peppers and half of the cilantro. Add pickled jalapeno, lime zest and half of the lime juice to taste. Season to taste with salt and pepper. Set aside.
3. Warm Tortillas
Stack tortillas and wrap in foil. Place directly on oven rack for 7–9 minutes, until tortillas are warm and pliable. Keep wrapped until ready to serve.
4. Prepare Avocado and Slaw
Meanwhile, cut avocado in half and remove pit. Slice into 1/4 inch slices and scoop flesh out with a large spoon. Set aside. In a medium bowl, combine cabbage, carrot, mayo and the following to taste: remaining cilantro, lime juice, salt and pepper.
5. Cook Shrimp
Drain shrimp, pat dry with paper towel. Wash hands with hot, soapy water. Season well with salt and pepper. Heat 1 tbsp. olive oil in a large non-stick skillet over medium. Once hot, add shrimp and spice blend cook for 3–4 minutes, until golden and an internal temperature of 165°F. Remove skillet from heat, carefully remove shrimp and roughly chop into 1/2 inch pieces. Return shrimp to skillet over low. Add honey and chipotle pepper in adobo to taste and cook for 1–2 minutes or until shrimp is evenly coated.
6. Assemble and Serve
Divide avocado evenly across tortillas and top with slaw. Spoon over shrimp and garnish with mango salsa. Enjoy!
