1. Setup
Chop the garlic, the oregano and the basil. Cut the lemon in half.
2. Cook the polenta
In a pan over medium-high heat, add 1 tbsp of butter. Drain and rinse the can of corn and add to the pan. Grill the corn for 5-6 minutes. Add the milk and 2 cups of water. Bring to a boil. Remove from the heat and add the polenta while stirring with a wirk. Once well incorporated, add the parmesan.
3. Cook the shrimp
Cook the shrimp In a skillet over medium-high heat, add 1-2 tbsp of butter. Add the shrimp and the spices, to taste. Cook 2-3 minutes. Add the garlic and the oregano and cook for another 1-2 minutes. Remove from the heat and add the juice of one lemon and the basil.
4. Plate your dish
Serve the shrimp on the parmesan polenta.
