Spicy Blue Cheese Chicken Burgers

with Buffalo Honey Glaze and Chopped Salad

1. Prepare Chicken Burgers Drain chicken. In medium bowl, combine chicken and panko and season well with salt and pepper. Divide chicken into two even balls and flatten into two 1/2 inch thick patties. Wash hands with hot, soapy water. Heat 1 tbsp. oil in a large non-stick skillet over medium. Add patties to skillet and cook for 4–6 minutes per side or until golden with an internal temperature of 165°F.
2. Prepare Blue Cheese Dressing Meanwhile, in a second medium bowl, combine mayo-sour cream blend and the following to taste: lemon juice, salt and pepper. Crumble in blue cheese and mix well.
3. Prepare Salad Trim end from lettuce, reserve 2 leaves and slice remaining lettuce into 1/2 inch thick strips. Cut tomatoes into 1/2 inch pieces. Slice cucumber into 1/4 inch rounds. Reserve one-third of cucumber slices. Pick and roughly chop dill leaves. Pell and trim end, slice shallot in 1/4 inch slices. To a large bowl, add lettuce, tomatoes, shallot, dill and remaining cucumber.
4. Prepare Buns Turn broiler on to 500°F with a rack 6 inches from the top. Slice buns in half and place directly on oven rack, cut side up. Broil for 3–4 minutes, until golden. Monitor closely to prevent burning.
5. Finish Burgers Once patties are cooked, remove from the skillet and set aside. Reduce heat to low and add 2 tbsp. butter, honey and buffalo sauce to taste. Stir to combine. Add patties back into the skillet and spoon sauce over them to coat. Turn off heat and leave in skillet until ready to serve.
6. Assemble and Serve Spread half of the blue cheese dressing onto top and bottom bun. Top with patties, reserved cucumber and lettuce and any remaining buffalo sauce to taste. Divide burgers onto serving plates. Add remaining blue cheese dressing to taste to salad and toss. Divide salad beside burgers. Enjoy!
