1. Prepare Eggplant and Naan
Turn oven on to 425°F with a rack in the centre position. Line a baking sheet with foil. Wrap naan in foil. Dice eggplant into 1 inch pieces. Toss eggplant on baking sheet with 2 tbsp. olive oil, and season to taste with salt and pepper. Place eggplant and naan in oven and bake for 20–22 minutes until eggplant is golden and tender and naan is warm.
2. Cook Cauliflower
Meanwhile, heat 1 tbsp. olive oil in a large non-stick skillet over medium-high. Once hot, add cauliflower rice, cauliflower spice and salt to taste. Cook for 3–4 minutes until rice is tender, but not mushy. Stir in almonds and two-thirds of the garlic and cook for 1–2 minutes. Divide rice between serving plates and cover with foil.
3. Prepare Tomato Sauce
In the same skillet from Step 2, heat 1 tbsp. olive oil over medium. Add onion and cook for 2–4 minutes until softened and golden. Add tomato spice and cook for 1 minute until fragrant. Add fire roasted tomatoes, tomato paste, sugar, crumbled stock cube, and 1 cup water. Bring to a low boil for 8–10 minutes until sauce thickens.
4. Prepare Coconut Yogurt
In a small bowl, stir together sauce blend with tahini, remaining garlic and salt to taste.
5. Finish Sauce
When timer for eggplant goes off, remove eggplant and naan from oven. Stir eggplant into tomato sauce, cooking for 2–3 minutes.
6. Serve
Pick and chop parsley leaves. Slice each naan into 6 wedges. Spoon tomato sauce mixture next to cauliflower rice and top with coconut yogurt. Garnish with parsley and serve naan on the side. Enjoy!
