Chicken Shawarma

with Fresh Tabbouleh and Yogurt

1. Cook Bulgur Turn oven on to 450°F with a rack in the centre position. In a medium pot, bring 1½ litres of salted water to a boil. Once boiling, add bulgur and cook for 12–15 minutes or until tender. If necessary, drain in a fine mesh sieve.
2. Prepare Ingredients Meanwhile, pick and finely chop parsley and mint leaves. Dice tomatoes and cucumbers into 1/2 inch pieces. Finely chop one-quarter of the onion and place in a large bowl. Cut remaining onion into 3/4 inch cubes. Chop the garlic. Cut the lemon in half. Line a baking sheet with foil.
3. Prepare Chicken Drain chicken and pat dry with paper towel. Season well with salt and pepper. With clean hands, in a second large bowl, toss chicken with 1 tbsp. olive oil, spice blend, garlic, remaining onion, and half of the following: Greek yogurt and lemon juice to preference. Wash hands with hot, soapy water. Spread chicken onto baking sheet in a single layer and transfer to the oven. Set a timer for 15 minutes.
4. Broil Chicken When timer goes off, turn broiler on to 550°F. Broil for 2–3 minutes until chicken and onions are crisp and chicken has reached an internal temperature of 165°F. Monitor closely to prevent burning.
5. Finish and Serve In large bowl with onion, combine parsley, mint, cucumber, tomato, bulgur and herb dressing. Season to taste with remaining: lemon juice, salt and pepper. Divide tabbouleh and chicken onto serving plates. Garnish with remaining yogurt. Enjoy!
