1. Setup
Preheat the oven to 425 °F. Chop the onion, the garlic and the parsley. Crumble the feta and zest the lemon.
2. Cook the spinach
In a pan, on medium-high heat, add a drizzle of olive oil. Cook the onions and the dried oregano to taste for 2-3 minutes. Add the spinach , season with salt and pepper, and cook for another 2-3 minutes. Once the spinach is cooked, remove from the heat. Add the parsley, the lemon zest, the juice of half a lemon and the garlic. Mix well.
3. Prepare the pizza dough
On a floured work surface, roll out the pizza dough to make one big pizza or smaller individual pizzas.
Transfer the dough to a baking sheet lined with parchment paper. Drizzle the dough with olive oil and add a few chili flakes to taste (caution! spicy).
4. Assemble the pizza
Evenly spread the spinach mixture on the pizza. Sprinkle with crumbled feta. Bake in the oven for 12-15 minutes.
5. Toast the pine nuts
In a dry pan, on medium heat, toast the pine nuts until golden. 1-2 minutes.
6. Plate your dish
Once the pizza is cooked, garnish with the toasted pine nuts before serving. Bon appetit!
