1. Setup
Cut the cucumber and radish into very small cubes. Chop the cilantro. Cut the lime into wedges.
2. Season the cabbage
Put the cabbage in a bowl with 2-3 tbsp. of cider or wine vinegar, 1 tbsp. of sugar and a pinch of salt. Add 2-3 tbsp. of water and mix everything together. Adjust seasoning to taste.
3. Make the salsa
In a bowl, mix the radish, cucumber and cilantro with a drizzle of oil, a dash of lime juice to taste, salt and pepper.
4. Cook the soyrizo
Heat a drizzle of oil in a skillet over medium high heat. Add the soyrizo and cook for 3-4 minutes until heated through.
5. Plate your dish
Heat the tortillas, if desired, in a clean skillet over medium-high heat for about 1 minute on each side. Garnish with the soyrizo, cabbage, radish salsa and vegan mayonnaise. Add lime juice to taste. Bon appétit!
