Southwest Chicken & Lime Rice Kit

with Pineapple Salsa & Smoky Black Beans

1. Cook Rice Rinse and drain rice in a fine mesh sieve. Add rice to a medium pot with 2½ cups salted water and bring to a boil. Reduce heat to low and cover with a lid. Cook for 15–18 minutes, or until grains are tender.
2. Prepare Ingredients + Pineapple Salsa Drain and rinse black beans in a sieve. Zest and cut lime in half. Dice tomato into 1/2 inch pieces. Thinly slice green onion. Peel shallot and trim ends. Dice shallot into 1/4 inch pieces. Cut avocado in half and remove pit. Cut into 1/2 inch slices and scoop flesh out with a large spoon. In a small bowl, combine 1 tbsp. olive oil, tomato, pineapple and half of the shallot. Season to taste with the following: half of the lime juice, salt and pepper.
3. Cook Chicken Drain chicken breast and pat dry with paper towel. In a medium bowl, combine chicken, spice blend and season well with salt and pepper. Heat 1 tbsp. olive oil in a large skillet over medium. Once hot, add chicken and cook for 4–5 minutes on each side until chicken reaches an internal temperature of 165°F. Remove from skillet and allow to rest for 5 minutes.
4. Cook Beans + Prepare Sour Cream To same skillet, add black beans and remaining shallot and cook for 2–3 minutes, until softened. Add tomato paste, 1/4 cup water and the following to taste: chipotle pepper in adobo, salt and pepper. Cook for 1–2 minutes, stirring frequently until thickened. In a small bowl, combine sour cream and remaining lime juice to taste. Add 1 tbsp. water at a time until drizzle consistency is reached.
5. Assemble + Serve If desired, slice chicken into 1/2 inch pieces. To rice, add lime zest and stir to combine. Divide rice, chicken, beans, avocado, pineapple salsa and sour cream between serving bowls. Garnish with green onion. Enjoy!
