Sour Mushroom Tom Kha Soup

with Coconut Rice

1. Cook Coconut Rice Rinse and drain rice in a fine mesh sieve. Add rice to a small pot with 1¼ cups salted water and half of the coconut oil. Bring to a boil, then reduce heat to low and cover with a lid. Cook for 13–15 minutes or until grains are tender.
2. Prepare Ingredients Meanwhile, trim ends from shiitake mushrooms and cut into 1/2 inch slice. Pat dry and tear oyster mushrooms into 1/2 inch slices. Zest and cut lime in half. Trim ends, peel and thinle slice shallot into 1/4 inch pieces. Pick cilantro. Cut chili in half and remove stem and seeds. Finely chop chili. Wash hands with hot, soapy water.
3. Fry Oyster Mushroom Heat 1 tbsp. oil and remaining coconut oil in a large pot over medium-high. Add oyster mushrooms and cook for 2 minutes on each side undisturbed, until crispy and golden brown. Ensure mushrooms are evenly spread at the bottom of the pot. Remove oyster mushrooms and set aside on a plate.
4. Cook Tom Kha Soup In the same pot over medium-high, add shiitake mushrooms and cook for 2–3 minutes, stirring occasionally, until golden brown. Add ginger, lemongrass and shallot. Cook for 1 minute, until fragrant. Add 2 cups water, lime leaves, crumbled stock cube and bring to a boil for 2 minutes. Add sugar, diced tomatoes, half of the fishless sauce, two-thirds of the coconut milk and the following to taste: lime juice, lime zest and chili. Reduce heat to medium and cook on a low boil for 5–6 minutes, or until mushrooms are tender and soup is fragrant. Season to taste with salt and pepper. Remove lime leaves with tongs.
5. Finish and Serve Divide rice into side serving bowls. Divide tom kha soup into serving bowls and drizzle in remaining fishless sauce. Add crispy oyster mushrooms on top of soup. Squeeze any remaining lime juice to taste over everything and garnish with cilantro and crispy onions. Enjoy!
