1. Prepare Sweet Potato Fries
Turn oven on to 425°F. Slice sweet potatoes into 1/2 inch fries. Line a baking sheet with parchment paper. Toss fries on baking sheet with 1 tbsp. oil, and salt and pepper to taste. Bake for 25–30 minutes or until golden and crisp. Taste and adjust seasoning with salt.
2. Prepare Ingredients
Slice tomato into 1/2 inch rounds. Tear up a few lettuce leaves. Thinly slice pickle.
3. Prepare Burger Sauce
In a small bowl, combine sour cream, 1 tbsp. water and spice mix to taste. Add more water 1 tsp. at a time until desired consistency is reached.
4. Prepare Burgers
Pat dry ground beef. Season well with salt and pepper. Combine using clean hands and form into two 1/2 inch thick patties. Wash hands with hot, soapy water. Heat 1 tbsp. oil in a medium skillet over medium heat. Use a spatula to flatten patties and cook for 4–5 minutes per side. Turn off heat, place cheddar slices on top of patties, and cover with a lid or foil. Let sit for 2 minutes until cheese had melted and burgers have reached an internal temperature of 165°F.
5. Finish and Serve
Place buns cut side facing up directly on the rack in the centre of the oven. Toast buns for 2–3 minutes or to taste. Spread burger sauce and mustard onto buns. Top with with burger patties, tomato, pickle, and lettuce. Divide burgers and sweet potato fries onto serving plates. Enjoy!
