1. Bake the sweet potatoes
Preheat oven to 425°F. Cut the sweet potatoes into fries. Place on a baking sheet lined with parchment paper. Add a drizzle of oil, salt and pepper. Bake in the oven for 22-25 minutes.
2. Marinate
Slice the tofu into rectangles to obtain 2 rectangles per person. Put in a shallow plate or bowl and mix with the spices, honey and 1/4 cup of oil. Season with salt and pepper. Coat every side and let marinate.
3. Setup
Grate the garlic. Zest the lime. Thinly slice the cabbage. Grate the carrot. Chop the cilantro.
4. Make the salad and the mayonnaise
Mix the cabbage with the carrot, half of the cilantro, a drizzle of oil, 1 tbs of cider vinegar and 1 tbsp. of sugar. In another bowl, mix the mayonnaise with the garlic and lime juice. Season with pepper to taste.
5. Cook the tofu
Heat a pan over medium-high heat. Cook the tofu 2-3 minutes on each side until coloured. Put back in the bowl with the marinade.
6. Plate your dish
Heat the bread to taste. Garnish the buns with the mayonnaise, some salad and 2 slices of tofu. Garnish the fries with the lime zest and the remaining cilantro. Serve the burger with the remaining salad and fries.
