Shrimp Soba Noodles
with a maple, sesame and soy sauce, cabbage, edamame and roasted peanuts

1. Setup
Chop the cilantro, garlic and peanuts. Peel the shrimp. Bring a pot of water to a boil.
2. Make the sauce
In a bowl, mix the soy sauce with the maple syrup, sesame oil, garlic, 1 2P | 1.5 3P tbsp. of cider or rice vinegar, 1 tbsp. of sugar, chili flakes to taste (spicy!), 3 2P | 4 3P tbsp. of water and half the cilantro.
3. Cook the noodles
Add the noodles to the pot of boiling water and cook 3-4 minutes until tender. Add the edamame and cook 1 minute. Drain.
4. Cook the shrimp
Heat a skillet over medium high heat. Roast the peanuts 3-4 minutes until colored. Remove from the skillet. Add a drizzle of oil and the cabbage and cook for 2-3 minutes. Add the shrimp and cook for 3-4 minutes until cooked through. Add salt and pepper to taste. Place the noodles, shrimp mixture and sauce in a large bowl and mix well.
5. Plate your dish
Serve the noodles and garnish with the peanuts and remaining cilantro. Bon appétit!
