1. Setup
Bring a pot of water to a boil. Grate or cut the carrots into very thin strips. Thinly slice the garlic. Chop the cilantro. Crush the peanuts. Remove the tails from the shrimps. Mix the sauce with 1/4 cup of warm water and 1 tbsp. of sugar.
2. Cook the noodles
Cook the noodles 1 minute with the edamame. Drain.
3. Cook the shrimp
Heat a drizzle of oil in a pan over medium-high heat. Cook the shrimp with the carrots and garlic for 3-4 minutes. Add salt and pepper.
4. Add the noodles
Add the egg and mix until cooked. Add the noodles and sauce.
Mix for 1 minute.
5. Plate your dish
Serve the noodles and garnish with the cilantro and peanuts. Bon appétit!
