1. Setup
Chop the garlic, coriander and lemongrass. Remove the tails from the shrimps and chop them very finely.
2. Prepare the stuffing
In a bowl, mix the shrimp with the garlic, lemongrass, cilantro, sambal oelek to taste, salt and pepper.
3. Make the dumplings
Prepare a small bowl of water to soak your fingers. Keep your dumpling sheets under a damp cloth while filling each envelope. Garnish the center of a dumpling with a small amount of the shrimp mixture. Moisten the edge of the dough with your fingers. Fold the bottom of the dumpling in half then fold the other 2 ends to form a triangle. Press the dough well to seal the dumpling.
4. Cook the dumplings
Bring a large pot of water to a boil. Slowly add the dumplings to the boiling water and cook for 2-3 minutes. Remove them with a slotted spoon. Bring another pot of water to a boil. Add the edamames and cook for 2-3 minutes.
5. Plate your dish
Serve the dumplings with the sweet chili sauce and the edamame. Bon appétit!
