Shrimp and Lemongrass Dumplings

with cilantro, sambal oelek and sweet chili sauce

1. Setup Chop the garlic, coriander and lemongrass. Remove the tails from the shrimps and chop them very finely.
2. Prepare the stuffing In a bowl, mix the shrimp with the garlic, lemongrass, cilantro, sambal oelek to taste, salt and pepper.
3. Make the dumplings Prepare a small bowl of water to soak your fingers. Keep your dumpling sheets under a damp cloth while filling each envelope. Garnish the center of a dumpling with a small amount of the shrimp mixture. Moisten the edge of the dough with your fingers. Fold the bottom of the dumpling in half then fold the other 2 ends to form a triangle. Press the dough well to seal the dumpling.
4. Cook the dumplings Bring a large pot of water to a boil. Slowly add the dumplings to the boiling water and cook for 2-3 minutes. Remove them with a slotted spoon. Bring another pot of water to a boil. Add the edamames and cook for 2-3 minutes.
5. Plate your dish Serve the dumplings with the sweet chili sauce and the edamame. Bon appétit!
