1. Setup
Thinly slice the seitan. Chop the cilantro, the pickled jalapeños and half of the onion. Slice the rest of the onion. Cut the peppers into sticks. Dice the tomato. Cut the lime in half.
2. Cook the rice
Rinse the rice. Bring a saucepan with 1.5 2P | 2 3P cups of water to a boil. Pour the rice, cover and cook over low heat for 10-12 minutes.
3. Cook the vegetables
In a pan, over medium-high heat, add a drizzle of olive oil. Add the sliced onions, the bell peppers and half of the spices. Season with salt and pepper and cook for 4-5 minutes.
4. Cook the seitan
In another pan over medium-high heat, add a drizzle of olive oil. Add the seitan slices and the rest of the spices. Cook for 2-3 minutes on each side.
5. Make the salsa
In a bowl, combine the tomatoes, the chopped onions to taste, the cilantro, the pickled jalapeños to taste
and the juice of half a lime. Season with salt and pepper.
6. Plate your dish
Serve the seitan with the rice, the vegetables, the salsa and the sour cream. Bon appétit!
