Seitan Caesar Salad

with corn, cucumber, cashews and croutons

1. Setup Preheat the oven to 400°F. Thinly slice the seitan, the cucumbers and the lettuce. Chop the garlic and the walnuts. Cut the bread into cubes. Drain and rinse corn.
2. Cook the croutons Toss the bread cubes in a large bowl with a drizzle of oil, salt and pepper. Place on a baking sheet lined with baking paper and bake in the oven for 8-10 minutes or until browned.
3. Toast the nuts Heat a pan over medium-high heat. Roast the nuts 3-4 minutes or until browned. Remove from the pan.
4. Cook the seitan Add a drizzle of oil to the pan over medium-high heat. Cook the seitan slices 3-5 minutes or until browned, turning them 2-3 times.
5. Make the sauce Mix the sour cream with half the grana padano, the garlic, 2-3 tbsp. of water, some salt and some pepper.
6. Plate your dish Mix the lettuce with the cucumber, the corn, the walnuts, the seitan, the croutons, a drizzle of oil, if desired, and the sauce. Adjust the salt and the pepper to taste. Serve and garnish with the remaining grana padano. It is possible to leave everything in the center of the table like a salad bar and let everyone help themselves. Bon appétit!
