Seitan Banh Mi Sandwich

with cucumbers, carrots, radishes and spicy mayonnaise

1. Setup Caution hot pepper! In case of sensitive skin, use gloves to handle the ingredient. Remove the seeds for a milder taste. Using a mandoline or a knife, thinly slice the cucumber, the carrot, the radishes and the jalapeño. Separate the cilantro leaves from their stems. Thinly slice the seitan.
2. Cook the seitan In a bowl, combine the soy sauce, 1 tbsp. of rice or cider vinegar and 1 tbsp. of sugar. In a pan over medium-high heat, add a drizzle of oil. Add the slices of seitan and cook for 2-3 minutes on each side. Add the sauce and cook for another 1-2 minutes.
3. Make the salad In a bowl, combine the cucumbers, the carrots, the cilantro, the radishes and the jalapeños. Season with salt and pepper. Add a drizzle of oil and a dash of rice or cider vinegar.
4. Make the spicy mayonnaise In a bowl, mix the mayonnaise with the sriracha sauce, to taste (caution! spicy).
5. Plate your dish Heat the bread a few seconds in the microwave if desired. Garnish the sandwiches with the spicy mayonnaise, the seitan and the vegetables. Bon appétit!
