1. Setup
Preheat the oven to 400°F. Very thinly slice the potatoes and onion. Use a mandoline if you have one. Peel and crush the garlic.
2. Cook the potatoes
Place the milk, cream and garlic in a large saucepan. Bring to a gentle boil. Add the onion, potatoes, salt and pepper and simmer for 10 minutes.
3. Bake in the oven
Transfer everything to a baking dish. Bake in the oven for 40-42 minutes. Add the cheddar on top 10 minutes before the end of cooking.
4. Make the salad
Thinly slice the tomato and cucumbers. Mix with the arugula, a drizzle of oil, salt and pepper.
5. Plate your dish
Serve the potatoes with the salad.
