1. Setup Chop the garlic and onion. Mince the basil. Cut the tomatoes and pepper into cubes.
2. Cook the vegetables Heat a drizzle of oil in a pan on medium-high heat. Cook the onion and garlic 2 minutes. Add the bell pepper and the tomatoes and cook for 3-4 minutes until tender. Add salt and pepper. To help your children with the development of their taste, remove the vegetables from the pan before cooking the sausages. Keep the ingredients separate.
3. Cook the sausages Add the sausage meat. Cook 5-6 minutes until completely cooked. Remove from the pan and set aside.
4. Mix the salad Meanwhile, mix the arugula with a drizzle of oil. Add salt and pepper.
5. Garnish the tortillas Garnish each half of the tortillas with the sausage mixture. Add the mozzarella and the basil. Close the tortillas so it makes a half circle. Let everyone make their own quesadillas.
6. Cook the tortillas Heat a drizzle of oil in a pan on medium-high heat. Cook the tortillas 2 minutes on each side until golden and crispy. Cut into triangles and serve with the arugula garnished with grated Grana Padano. Bon appétit!
