Satay Sauce Ramen Noodles

with peanuts, ginger, pickled cucumber and edamame

1. Setup Bring a pot of water to a boil. Chop the garlic, ginger and cilantro. Grate the carrot. Cut the cucumbers into half rounds. Coarsely chop the peanuts.
2. Marinate de cucumber Put the cucumbers in a bowl with 1 tsp. of sugar, 1-2 tbsp. of cider or rice vinegar, 1 tbsp. of water and a pinch of salt. Let marinate.
3. Cook the noodles Cook the noodles and edamame in the boiling water for 2-3 minutes until tender. Keep 3-4 tbsp. of the cooking water. Drain and rinse under cold water to cool.
4. Heat the sauce Put the Satay sauce, ginger and garlic in a small saucepan with 1-2 tbsp. of water. Heat over medium heat for 3-4 minutes.
5. Plate your dish In a bowl, combine the noodles with the sauce, some of the reserved cooking water, the vegetables, the peanuts and the cilantro. Serve and add lime juice to taste. Bon appétit!
