1. Setup
Chop the chives, the dill and the capers. Roughly chop the lettuce. Cut the eggs into quarters. Cut the lemon in half. Cut the ends off the green beans. Cut the potatoes in half.
2. Cook the salmon
Heat a drizzle of oil in a pan over medium heat. Season the salmon with salt and pepper. Add the salmon to the pan and cook 3-5 minutes on each side until the center is cooked.
3. Cook the potatoes and the green beans
Add the potatoes in a pot with enough water to cover. Bring to a boil and cook for 8-10 minutes until tender. When there are 2-3 minutes left, add the green beans. Drain and reserve.
4. Make the sauce
In a bowl, combine the mustard with the juice of half a lemon, the chopped capers to taste, the chives and the dill. Add a generous drizzle of olive oil. Mix well and season with salt and pepper.
5. Plate your dish
Serve the salmon with the green beans, the potatoes, the eggs and the lettuce. Garnish with the rest of the capers and the sauce. Bon appétit!
