Salami and Orzo Salad

with bell pepper, feta, cucumber, olives and oregano dressing

1. Cook the orzo Bring a pot of salted water to a boil. Add the orzo and cook 6-7 minutes until tender. Drain and rinse under cold water to cool.
2. Setup Slice the pepper and cucumber into small cubes. Cut the olives in 2. Chop the shallot. Cut the lemon in half. Slice the salami into thin strips. Crumble the feta.
3. Make the dressing In a bowl, mix the shallot with the oregano to taste, a generous drizzle of oil, the juice of half a lemon, 1 tbsp. of red wine or cider vinegar, salt and pepper.
4. Plate your dish Mix the orzo with all the ingredients and the dressing. Adjust seasoning to taste. Bon appétit!
