Sage Pork Tenderloin with a Cream Sauce
with roasted sweet potato, carrot, onion and thyme orzo

1. Setup
Preheat oven to 425°F. Cut the sweet potatoes into cubes. Roughly chop the red onion. Chop the thyme and sage separately. Slice the carrots into thin half rounds.
2. Roast the vegetables
Mix the sweet potatoes, onion, carrots, thyme and half of the sage with a drizzle of oil, salt and pepper. Put on a sheet pan with baking paper and bake in the oven for 20-22 minutes. Leave some space for the pork tenderloin.
3. Season the pork
Mix the spice mixture with the sage, salt and pepper. Coat the pork with the brown sugar mixture. Heat a drizzle of oil in a pan on high heat. Sear the pork 1 minute on each side until colored. Transfer to the sheet pan with the vegetables and cook in the oven for 12-14 minutes.
4. Cook the orzo
Bring a pot of water to a boil. Cook the orzo 6-7 minutes until tender. Drain then mix with a drizzle of oil, salt and pepper. Add the cooked vegetables to the orzo.
5. Make the sauce
Add 0.5 2P | 0.5 3P broth cube and 1 2P | 1.5 3P cup of water in the pan that cooked the pork on medium-high heat. Scrape the bottom of the pan to collect the meat juices. Add the Dijon mustard and the cream and cook 5-7 minutes until the sauce thickens. Add pepper.
6. Plate your dish
Serve the pork with the vegetable orzo and the sauce.
